Look forward to the week with this #vegan pumpkin spice treat.
We all love that first sip of a Pumpkin Spice Latté from Starbucks or our neighborhood coffee shop. With 49 grams of sugar however, the crash can happen well before we even open our inbox, and we are starting our day off with a caloric surplus. Instead, try this all natural morning boost!
Calories: Less than 70
1/2 cup of organic pumpkin (can be found in any grocery store)
1 1/2 cups of Califia Farms Toasted Coconut Almond Milk (45 cals/8oz)
2 cups of freshly brewed coffee (for extra flavor, sprinkle pumpkin spice on top of coffee grounds before brew) This can also be substituted with espresso if preferred.
1 teaspoon of pumpkin spice
1 teaspoon of cinnamon
1 teaspoon of vanilla
1/2 teaspoon of sea salt
1/2 tablespoon of organic maple syrup (optional)
Stevia to taste (optional)
Brew 2 cups of coffee in your traditional coffee maker.
While coffee is brewing, on medium heat, combine almond milk, pumpkin, pumpkin spice, cinnamon, vanilla, sea salt and maple syrup in a medium sized saucepan.
Stir until creamy & hot.
Pour 1/2 coffee 1/2 pumpkin spice mixture in coffee cup.
Top with cinnamon & enjoy! (Add stevia to taste)
