Introduction
I began substituting bison for beef after Run Fast Eat Slow became a bible-like book in my kitchen. Bison is a high-quality protein with a richer flavor than traditional beef. Additionally, it is more sustainable since bison produce fewer greenhouse gases. Ground bison can often be found on our grocery list because it is a fast protein I can add common household seasonings like garlic, cumin, and onion in minutes. It is easy for other members of the family to build personalized bowls and satiating snacks from this wholesome eat whenever they are hungry too.
These bison, pita chip, and herb meatballs are packed with flavor, and the perfect pair to almost any of your favorite sides you cook regularly. They are juicy, enjoyable to make, and a staple recipe I hope you and your family fall in love with creating. Curious where to find bison? Ask your local butcher. You can also find ground bison hidden with the frozen beef at your regular grocery store.

How to make:
Heat oven to 425 degrees. Combine all ingredients in a large bowl until thoroughly mixed. Shape meat into balls 1.5 inches in diameter. (You should be able to make around 15).
Heat large, oven-safe sauce pan with 2 tablespoons of butter. Once the pan is hot, evenly disperse meatballs, flipping after about 45 seconds to one-minute to sear the edges.
Place pan in oven for 15 minutes. Serve over pasta, rice or enjoy as an easy protein-packed snack!
Ingredients:
1lb ground bison
1 cup, ground pita chips - place in food processor until the consistency portrays that of breadcrumbs
1/2 cup, cilantro, finely chopped
1/2 cup, green onion, finely chopped
2 large cloves of garlic, minced
2-3 tablespoons of coconut aminos or soy sauce
1 teaspoon black pepper
1 teaspoon of salt
