Lemony Brussels Sprouts Salad

Introduction

Lemons add immediate freshness to just about everything! When combined with a member of the cabbage family like the Brussels sprout, the lemony flavor breaks down their bitter nature. Sharing the spotlight with apples, Dijon mustard, sweet cherry tomatoes, and crunchy pine nuts - this salad leaves room for any protein or pasta you want to enjoy it with. It's hearty enough for the main course and versatile enough to be served as a side.

Lemony Brussels Sprouts Salad

How to make:

Begin with the dressing! Blend together olive oil, greek yogurt, mustard, lemon juice, zest and sea salt until smooth.

Ingredients:

For the Dressing:

  • 1/4 cup of olive oil

  • 2 tablespoons of full fat greek yogurt

  • 1 teaspoon Dijon mustard

  • 2 tablespoons of lemon juice (suggest buying in bottle)

  • Zest of one lemon

  • 1-2 teaspoons of sea salt

For the Salad:

  • 1 - 2 lbs of brussels sprouts (you can often buy these pre shredded) If you buy them whole, trim the ends and use a food processor to shred yourself 

  • 1 apple 

  • 1 cup of sweet cherry tomatoes, halved 

  • 1-2 shallots

  • 1/4 cup of basil, chopped

  • 1/4 cup of mint, chopped

  • 1/4 cup of toasted pine nuts (quickly toast in sauce pan)
