Simple Roasted Purple Cabbage

Introduction

Do you have ever have those evenings where you just don't know what to make because you're bored of cooking? This purple cabbage is for those nights. When roasted and crispy it pairs well with any protein and starch, and when sliced thinly enough - makes you feel like you're eating some form of fried food. When really - you are nourishing your taste buds and belly with a superfood we're not always soon to think of!

Simple Roasted Purple Cabbage

How to make:

Preheat oven to 400 degrees. Thinly slice purple cabbage into half-moons. They will naturally fall apart, and that is a-okay!

Place on a large baking sheet. Drizzle EVOO and sea salt on top. Bake for 15-20 minutes. Flip, and bake for another 5-10 until crispy!

Ingredients:

  • 1/2 a purple cabbage

  • 2-3 tablespoons of EVOO

  • Sea salt to taste (I have a strong palate, so it's best I don't advise here)
