
Spring Forward Lemony-Basil & Jalapeño Chicken Salad

Introduction
With chicken resurfacing to stardom, its next-day version is too! We love chicken salad in this household because of its accessibility and flavor. As a health coach, I personally love how you can sneak in vegetables without even realizing it. Try this spring favorite and try adding your own fresh flavors. It's hard to go wrong!

How to make:
Combine all ingredients together until well mixed. Keep in fridge for up to 5 days - though, it probably will not last that long!
Ingredients:
For the Base:
2 chicken breasts, finely chopped
2 stalks of celery, finely chopped
2 artichoke hearts, chopped (optional)
1/4 cup of pine nuts (you can use any nut of your choice)
1/4 cup of fresh basil
1/2 a jalapeño
For the Moisture:
3-4 tablespoons of full fat greek yogurt
1 tablespoon of lemon juice
Zest from one lemon
1 teaspoon of salt
1 teaspoon of peper
