Ah, spring. We've all been waiting for everything this special season brings to us! Warm weather, fresh vegetables, and longer days make us each feel a little more like ourselves. This spring-forward salad has texture, flavor, and a punch of spice - informing us that there are many outdoor meals in front of us.

Springtime Cucumber-Lime Avocado Corn Salad

How to make:

Mix all salad ingredients in large serving bowl. Blend dressing ingredients until creamy. Combine salad ingredients with dressing, and enjoy with your protein of choice.

Ingredients:

Salad Ingredients:

  • 1-2 cucumbers, chopped

  • 2 cups cherry tomatoes, halved

  • 1/2 red onion, julienned

  • 2 ears of corn cut off the cob (1 ear raw, 1 ear blackened if desired)

  • 1/4 cup cilantro or parsley (deleafed or chopped)

  • 1 avocado, cubed

  • 1/2 jalapeño, chopped

  • A few leaves of mint

  • 1/2 cup roasted nuts (optional)


Dressing Ingredients:

  • 1/2 cup of olive oil (fruity)

  • 1/4 cup on lime juice

  • 1/4 cup cilantro

  • 1/2 cup of honeydew melon

  • 1/4 cup of red wine vinegar

  • 1 clove of garlic

  • 1/2 jalapeño

  • 1 teaspoon of sea salt

  • 1 teaspoon of crushed red pepper

  • 1 teaspoon of black pepper
