Sweet Pickled Onions

Introduction
The sweet pickled red onion. We often see this served with tacos, Asian inspired meals, or seafood, but it marries well with so much more. Not only does it offer probiotic benefits, but the addition of the pickled onion provides an umami palate pleaser that is easy to neglect in the standard American diet.

How to make:
Boil water, vinegar, sugar and salt until everything is combined. While liquid mixture is heating, thinly slice the red onion. Combine in a durable glass jar. Let cool and store in fridge for at least one hour - best in one day.
Ingredients:
1 red onion
1 cup of water
1/4 cup of white vinegar
1 tablespoon of sugar
1 teaspoon of salt
