Diaries
Sauces, marinades, and dressings are the best compliment to any meal. While providing important fats, micronutrients, and flavor, these medleys are often a final much-needed touch to satiate those tummy and taste buds! Each of these recipes share a general direction inviting you to improvise and add your personal touch.

Sun-dried Tomato Vinaigrette

1/4 cup olive oil
-
3 cloves of garlic garlic
-
1/4 cup of fresh basil
-
4 cherry tomatoes
-
1 tablespoon of sun-dried tomatoes
-
1/4 cup water
-
2 tablespoons balsamic
-
Juice from one lemon
-
Salt to taste
Combine all ingredients in blender. Blend on high.. Add a couple tablespoons of water to get the consistency you like.

Ginger-Beer & Chili Lime Dressing & Marinade
-
4 ounces of olive oil
-
2 teaspoons of toasted sesame oil
-
1 ounce of balsamic vinegar
-
1 ounce of soy sauce or coconut amino acids
-
1 tablespoon of Sriracha or other chili sauce
-
2 cloves of garlic, minced
-
2 teaspoons of honey
-
Lime juice from 1-2 limes
Stir all ingredients together or blend!

The Best Basic Balsamic Reduction
-
1 bottle (about 16 ounces) of high-quality balsamic vinegar
Pour vinegar into a medium saucepan. Once boiling, reduce to a simmer for 5-7 minutes. It is done if the reduction coats the back of a spoon. Store in glass container, and let cool in the fridge for an hour for a thicker consistency. Option to add maple syrup or honey for thicker consistency. (add one reduced to a simmer)

Vegan Pesto

1/2 cup of olive oil
-
1/4 cup of water
-
1/4 cup of lemon juice
-
1/2 cup of pine nuts
-
2 cloves of garlic
-
1/2 yellow pepper
-
2 handfuls of basil
-
1 teaspoon of sea salt
Blend or process on high for 20-30 seconds. Blend for longer if you prefer a smoother consistency.

Spicy Cashew Miso
Vinaigrette
-
1/2 cup EVOO
-
1/3 cup cashews
-
1/4 cup rice vinegar
-
3 tablespoons of sriracha (or preferred hot sauce)
-
1 tablespoon of white miso paste
-
1 tablespoon of honey
-
1 garlic clove
-
1 teaspoon of salt
-
Zest from one lemon (optional)
Blend on high., and add a couple tablespoons of water to get the consistency you like.

Lemon-Honey Miso Dressing
-
8 ounces of olive oil
-
6 ounces of lemon juice
-
1 ounce of water
-
3 cloves of garlic
-
2 tablespoons of miso paste
-
2 tablespoons of honey
-
1 teaspoon of sea salt
Blend all ingredients on high until creamy & smooth. Store up to one week. Shake before each use.

Thai-Inspired Balsamic Vinny

1/2 cup of avocado oil
-
1 tablespoon of almond butter
-
2 tablespoons of balsamic reduction
-
2 cloves of minced garlic
-
2 tablespoons of red wine vinegar
-
1 tablespoon of water
-
2 mint leaves, finely chopped
Combine all ingredients together and stir until smooth. Don't feel like chopping? Just blend it all together!

Cilantro-Lime & Jalapeño Dressing
-
1/2 cup of EVOO
-
1 cup of packed cilantro
-
1/4 shallot
-
1 clove of garlic
-
1/4 cup of lime juice
-
1 teaspoon of red pepper flakes
-
1/2 of a jalapeño
-
1/4 cup of red wine vinegar
-
1 teaspoon of sea salt
-
1 teaspoon of pepper
-
Optional: Add honeydew melon, peach, or your favorite berry for a little extra sweet bite!
Blend together until smooth!

Summer Herb Green Goddess Dressing
-
1/4 cup EVOO
-
1 cup whole milk greek yogurt
-
1 tablespoon of green onion
-
1 tablespoon of mint
-
1 tablespoon of dill
-
1 tablespoon of chives
-
Juice from one lemon
-
Zest from one lemon
-
1 garlic clove
-
1 teaspoon of sea salt
-
1 tablespoon of honey
Blend on high., and add a couple tablespoons of water to get the consistency you like.

Garlic, Basil & Mint Dressing
-
1 packed cup of basil
-
Leaves from 5 mint sprigs
-
3 cloves of garlic
-
6-8 ounces of olive oil
-
1-2 tablespoons of honey
-
Sea salt & pepper to taste
Blend on high until smooth, add water if you'd like it slightly thinner.

Gut-Friendly Smoked Paprika Honey Mustard
-
2/3 cups of EVOO
-
1/4 cup of apple cider vinegar
-
1 tablespoon of rice vinegar
-
1-2 tablespoons of water
-
1-2 tablespoons of honey
-
1 teaspoon of smoked paprika
Blend it all together until smooth!
